This is a very easy dish and a great way to get some vegetables and fiber in your diet.
2 cans (14. 5oz) diced tomatoes with basil, garlic, and oregano
2 cans (15.5 oz) cannellini beans or other white beans, drained and rinsed
8-ounce bag of spinach
½ pound of penne pasta
½ cup crumbled feta cheese
1. Combine tomatoes and beans in a large skillet over medium heat, bring to a boil. Reduce heat and simmer for 10 minutes
2. Add spinach, cook 2 minutes or until spinach wilts, stir occasionally.
3. Place 1 cup of pasta on a plate and top with a heaping cup of sauce, crumble 2 tablespoons cheese on top.
Makes 4 servings.
