Vegetable Minestrone Soup

Tip: You can often find pre-chopped onion, celery and carrot mixtures in the produce isle which will speed preparation. You can substitute 1 teaspoon Italian Seasoning for the spices.

 

Ingredients:

• 2 teaspoons olive oil

• ¾ cup chopped onion

• 1 minced clove garlic

• ¾ cup chopped celery

• 1 cup diced carrots

• 2 cups diced zucchini

• 1 can drained Cannellini or other white beans

• 4-14.5 oz cans diced tomatoes

• ½ teaspoon basil

• ¼ teaspoon oregano

• 1/8 teaspoon pepper

• ¾ cup small macaroni, uncooked

• Parmesan cheese

 

Directions:

• In a large pan, heat oil, cook onion and garlic until tender, about 5 minutes.

• Add 3 cups of water, celery, carrots, zucchini, beans, tomatoes and spices. Simmer partially covered for 30 minutes.

• Add macaroni and cook 10 minutes.

• Serve soup topped with sprinkle of parmesan cheese.
